Guests request it on every sailing. Carnival released the recipe publicly, and we’re thrilled to share it here.
Ingredients (Serves 6)
For the chocolate cake batter:
- 8 oz (225g) dark chocolate (70% cocoa), chopped
- 8 oz (2 sticks / 225g) unsalted butter, plus extra for greasing
- 4 large eggs
- 4 large egg yolks
- ½ cup (100g) granulated sugar
- 4 tablespoons all-purpose flour, plus extra for dusting
- Pinch of salt
Instructions
- Preheat your oven to 425°F (220°C). Generously butter and lightly flour six 6-oz ramekins or individual soufflé dishes, tapping out excess flour. Place on a baking sheet.
- In a medium heatproof bowl set over a pan of barely simmering water (or in a microwave in 30-second bursts, stirring between each), melt together the chocolate and butter until completely smooth. Remove from heat and let cool for 5 minutes.
- In a large bowl, whisk together the eggs, egg yolks, and sugar until the mixture becomes pale and slightly thickened — about 2–3 minutes of vigorous whisking.
- Gently fold the chocolate mixture into the egg mixture until combined. Sift in the flour and pinch of salt, folding until just incorporated. Do not overmix.
- Divide the batter evenly among the prepared ramekins. (At this point, the cakes can be refrigerated, covered, for up to 24 hours. Bring to room temperature 30 minutes before baking.)
- Bake for 12–14 minutes, until the edges are set and the tops look just barely set — the center should still be slightly jiggly. The key is not to overbake: you want molten chocolate in the center, not a fully-baked cake.
- Remove from oven. Let stand for 1 minute, then run a thin knife around the edge of each ramekin. Invert onto individual serving plates. Dust with powdered sugar and serve immediately with a scoop of vanilla ice cream.
Chef’s tip: The difference between a perfect molten cake and an overbaked one is literally 2 minutes in the oven. Trust the jiggle — if the center moves when you gently shake the pan, it’s ready. Every oven is different, so the first time you make this, do a test cake and adjust your timing accordingly.
Carnival Cruise Line Chocolate Mousse
Light, airy, and intensely chocolatey, this mousse has appeared on Carnival’s dinner menus for years. It’s deceptively simple to make and spectacular as a dinner party dessert.
Ingredients (Serves 4)
- 6 oz (170g) dark chocolate (60–70% cocoa), finely chopped
- 3 tablespoons strong brewed coffee or espresso
- 3 tablespoons unsalted butter
- 3 large eggs, separated
- 3 tablespoons granulated sugar, divided
- 1 cup heavy whipping cream
- 1 teaspoon pure vanilla extract
- Pinch of salt
Instructions
- Melt the chocolate with the coffee and butter in a heatproof bowl over simmering water (or microwave carefully). Stir until smooth. Let cool to room temperature.
- Whisk the egg yolks with 2 tablespoons of sugar until pale and thick. Stir into the cooled chocolate mixture.
- In a separate clean bowl, whip the cream with the vanilla to soft peaks. Refrigerate.
- In another clean bowl, beat the egg whites with the pinch of salt until soft peaks form. Add the remaining 1 tablespoon sugar and beat to stiff peaks.
- Gently fold the egg whites into the chocolate mixture in thirds until no white streaks remain. Then fold in the whipped cream until just combined.
- Divide among 4 serving glasses or ramekins. Refrigerate for at least 2 hours (or overnight) before serving. Top with a small dollop of whipped cream and a few chocolate shavings.
Carnival Cruise Dessert Recipe: Key Lime Pie
The Florida-style key lime pie served throughout Carnival’s fleet has a devoted following among guests who sail regularly. It’s bright, tangy, and has a perfect graham cracker crust.
Ingredients (One 9-inch pie)
- Crust: 1½ cups graham cracker crumbs, 3 tablespoons sugar, 6 tablespoons melted butter
- Filling: 3 cans (14 oz each) sweetened condensed milk, 1 cup fresh key lime juice (or regular lime juice), 1 tablespoon lime zest, 8 egg yolks
- Topping: 1 cup heavy cream, 2 tablespoons powdered sugar, ½ teaspoon vanilla
Instructions
- Preheat oven to 350°F (175°C). Mix crust ingredients together and press firmly into a 9-inch pie dish. Bake for 8 minutes. Cool completely.
