Here’s a recipe from Carnival Cruise Line for their New England Crab Cakes on Roasted Pepper Remoulade. My version pictured here was not as elegant as their presentation, but the taste was great!
For the crab cakes:
1/4 cup butter
1 tablespoon chopped onion
1 tablespoon chopped celery
1 tablespoon chopped red bell pepper
3/4 flour divided
1/2 cup fish stock
1 1/2 cups lump crab meat
Cayenne pepper to taste
1 teaspoon chopped fresh parsley
2 eggs
1 tablespoon water
3/4 cup soft bread crumbs
For the Remoulade:
2 medium red bell peppers
1 cup mayonnaise
2 tablespoons chopped capers
2 tablespoons dill pickles
2 tablespoons minced onion
1/2 teaspoon chopped garlic
1 1/2 teaspoons of lemon juice
