This classic French dessert — known in France as Île Flottante — features a light, airy meringue floating on a pool of crème anglaise, drizzled with rich chocolate sauce.

Ingredients for the Meringue

  • 6 egg whites
  • 1 cup sugar
  • 1 teaspoon vanilla extract
  • Pinch of cream of tartar

Ingredients for the Crème Anglaise

  • 2 cups whole milk
  • 6 egg yolks
  • ½ cup sugar
  • 1 teaspoon vanilla extract

For the Chocolate Sauce

  • 4 oz dark chocolate, finely chopped
  • ½ cup heavy cream
  • 1 tablespoon butter

Instructions

Meringue: Beat egg whites with cream of tartar until soft peaks form. Gradually add sugar, beating to stiff, glossy peaks. Add vanilla. Poach spoonfuls in gently simmering water for 3 minutes per side. Drain on paper towels.

Crème Anglaise: Heat milk until steaming. Whisk egg yolks with sugar until pale, then slowly add hot milk. Return to saucepan and stir over medium-low heat until thickened enough to coat a spoon. Stir in vanilla. Strain and chill.

Chocolate Sauce: Heat cream until simmering. Pour over chopped chocolate and stir until smooth. Add butter and stir until glossy.

To Serve: Pool crème anglaise in a shallow bowl, place meringue island on top, and drizzle with chocolate sauce. Serve immediately.
