Ingredients

  • 2 large yellow onions, cut into ½-inch rings
  • 1 cup all-purpose flour, divided
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • ½ teaspoon salt, plus more for serving
  • ¼ teaspoon black pepper
  • 1 cup cold sparkling water or club soda
  • vegetable oil for frying

Instructions

  • Separate onion rings and pat dry thoroughly. Lightly dust with ¼ cup of the flour — this helps the batter stick.
  • In a bowl, whisk together remaining ¾ cup flour, garlic powder, paprika, salt, and pepper. Add cold sparkling water and whisk until just combined (a few lumps are fine — don't overmix).
  • Heat 2 inches of vegetable oil in a deep pan or Dutch oven to 375°F (190°C).
  • Dip floured rings into the batter, letting excess drip off. Fry in batches (don't crowd the pan) for 2–3 minutes per side until deeply golden and crispy.
  • Drain on paper towels, season immediately with a little extra salt, and serve hot with ranch dipping sauce or ketchup.

Notes

The key to crispy onion rings is cold batter — use ice-cold sparkling water and don't overmix. Fry in small batches to keep the oil temperature steady. If the oil cools too much between batches, wait for it to return to 375°F before adding more rings.
